From bean to bar: all steps of creating a chocolate bar are done in my home kitchen (except the cacao farming).

Warm and mellow.

70% dark with mellow island warmth. Like all of our chocolate, there is no bitterness to detect. This bar is cocoa on cocoa, chocolatey goodness from beginning to end.

Sweet strawberry and warm cocoa.

Another 70% that has the most amazing strawberry ice cream opening. The flavor rounds off to a warm balanced chocolate. Unforgettable.

Tanzania Kokoa Kamili

“Buttery” with “bright fruits.”

Don’t expect bitter from this 80% dark. This cacao’s buttery opening leads to a pomegranate-like finish. Has a touch of extra cocoa butter for a soft taste.

Ecuador Costa Esmeralda

Woody with cherry.

At 70%, this bar is crisp and snappy. The opening has woody tannins with a robust chocolatey taste, and end with a cherry note. This location is particularly special to me because my pet parrot’s species is from this area!
